Emma and Matthew Gurnsey produce a variety of boutique farmhouse
cheeses from certified organic goat's milk on their 87 acre
property at Mt Lookout. They have developed their organic
herd to produce healthy, free- ranging goats that supply top
quality milk. Capra Cheese ( Capra = Latin for goat ), now
produces a range of traditional cheeses for local restaurants,
Farmer's Markets and produce outlets.
They both have qualifications in Organic Agriculture and
small business. They set about building their own dairy and
cheese making factory on-farm, whilst breeding up a herd of
goats and formulating marketing strategies.
Capra's organic goat's milk cheeses are made via a slow lactic
acid fermentation and the Gurnsey's say its best served on
a cheese board, lightly grilled or in leafy green salads,
on sourdough bread with berry jam or simply crumbled through
pasta.
Capra Cheese (winners of 2 gold medals at the Australian
Specialist Cheesemaker's Show; runner-up in their class for
the Australian Grand Dairy Awards and most recently, taking
out 4 silver medals in both the Victorian and Australian Dairy
Industry Association Awards), produce a range of six distinct
Boutique varieties:
Fresco - A soft, fresh goat's milk curd that is mild
and creamy with a subtle, lactic sweetness. Fresco is deliciously
moist and fluffy and exhibits floral overtones with a refreshing
acidity.
Allegro - A firm, fresh goat's cheese with a slight
tang and delicate clean finish. Allegro is creamy and gentle
acidic, with a dense and sensuous texture.
Mountain Ash - This elegant pyramid is ash - coated
in the traditional French style. It is a fresh, but complex
cheese with a firm texture. The vegetable ash coating forms
a natural rind and neutralizes the acidity of this cheese's
surface.
Cameo - An ashed and mature goat's cheese with a natural
white mould rind and creamy texture. Cameo is aromatic and
sweet with a lingering mouthfeel.
Velvet - Capra's signature cheese is a carefully matured,
French-style barrel with a white mould rind. When young, this
cheese is nutty, with a mushroomy aroma and subtle suggestions
of truffle. Aged, it develops a sweet, full-bodied richness.
Serenade - Capra's stunning heart-shaped cheese has
a velvety, white mould rind with a striking ash layer that
runs through the centre of the cheese. Serenade is smooth
and rich, with complex blue overtones and a heady hint of
spiciness.
